與他的相識是於2002年友人開餐廳時,當時我協助友人接見一些員工,餐廳尚欠一名小工做pizza及甜品。見了好些人,燕瘦環肥,老少婦孺皆有,只有啓賢小友的答案令我最滿意。還記得我問他:「你為甚麼來見這份工?」他不是答人工好,福利好或是要學野之類公式答案,他說:「因為我中意食甜品。」
真的,做甜品如果連自己都不喜歡食那可說服人食你的甜品?!他一面 baby face,二十幾歲人長得像十六七,樣子很乖,是那種湯丸型(軟軟糯糯,不慍不燥)的男孩,沒有殺傷力。
在這四個月裏,雖不是很長的日子,但友誼就此建立。我常提他要多點進修,無論學術或是技術,他日總會有用。我給予他前途的意見,見到他的進步,由對包餅只有一點點認識,到了現在于五星級酒店餅房任職,我對他說看到他由餐廳轉到酒店工作,已放下心頭大石了。
現在他時常約我一起吃飯-吃是我們溝通的橋樑!
Pizza
Ingredients
1. Bread Flour 180 g
2. Cake Flour 80 g
3. Dry Yeast 5 g
4. Salt 1/4 Tsp
5. Sugar 1/2 Tsp
6. Egg 1/2 Pcs
7. Olive Oil 20 g
8. Cold water 145ml
Method :
Put flour, salt and sugar in a bowl, slightly mix and dig a well
Ingo yeast, water, egg and olive oil
Mix together and make a ball
Knead the ball until smooth supple dough is achieved. About 15 mins.
Grease a big bowl and put the dough in it.
Cover the bowl with a cling firm. Leave in a warm place (about 28 – 35 ℃) to prove for about 30 mins.
Remove the dough onto a floured table. Punch down the dough.
Cut the dough into a round ball, cover with cling firm. Rest for about 10 mins
Shape it and brush with Tomato sauce and topping.
Put into the preheated oven about 180℃
Bake for about 25 mins
